How to Scale a Recipe for More or Fewer People

    Turning a recipe for 4 servings into dinner for 8 can sound as simple as multiplying every ingredient by two. Sometimes it is exactly that simple. Sometimes it is not, because cooking does not always scale perfectly linearly.

    The Basic Recipe Scaling Formula

    Every recipe scaling question starts from one formula: new quantity = original quantity × new servings ÷ original servings.

    The middle part of that formula (new servings ÷ original servings) is called the scaling factor, and it is worth calculating once and reusing for every ingredient. A recipe written for 4 servings that needs to feed 6 has a scaling factor of 6 ÷ 4 = 1.5.

    From there, every ingredient gets multiplied by the same factor: 2 cups of flour become 2 × 1.5 = 3 cups, 200 g of chicken becomes 300 g, and so on down the list.

    How to Scale a Recipe Step by Step

    1. Find the Original Serving Size

      Check what the recipe says it serves. If it only gives a yield, like "one 20 cm cake", decide how many portions that means for your table and use that number.

    2. Choose the New Serving Size

      Decide how many servings you actually need, including planned leftovers. This number, not appetite optimism, drives all the math that follows.

    3. Calculate the Scaling Factor

      Divide the new servings by the original servings. Cooking for 6 from a 4-serving recipe gives 6 ÷ 4 = 1.5. Cooking for 2 from the same recipe gives 2 ÷ 4 = 0.5.

    4. Multiply the Ingredient Quantities

      Multiply every ingredient amount by the factor, and write the new quantities down. Converting awkward results into kitchen units as you go (¾ cup instead of 0.75 cups) saves confusion at the counter.

    5. Review Ingredients That Need Judgment

      Scan the scaled list for the ingredients that deserve caution: salt, spices, chili, leavening agents and strong flavorings. For these, the math is a starting point, not a verdict.

    6. Check Pan Size and Cooking Time

      More food usually needs more space, and sometimes a different cooking time. Confirm your pan or pot fits the new volume before you start, not when the batter is already mixed.

    7. Make Final Adjustments While Cooking

      Taste and watch as you cook. Scaled recipes benefit from checking doneness a little earlier than expected and seasoning gradually toward the right amount.

    Example: Scaling a Recipe from 4 Servings to 6

    Take a simple batter written for 4 servings and scale it to 6. The scaling factor is 6 ÷ 4 = 1.5, and every ingredient gets multiplied by it:

    Example: Cutting a Recipe in Half

    Scaling down uses the same formula with a factor below one. Halving a 4-serving recipe for 2 people means a factor of 2 ÷ 4 = 0.5: every quantity gets multiplied by 0.5, so 2 cups become 1 cup and 300 g becomes 150 g.

    Halving surfaces awkward quantities more often than doubling does. One egg is the classic case: half an egg is inconvenient to measure. Common kitchen approaches include whisking the egg and using roughly half by volume, or keeping the whole egg and accepting a slightly richer result in forgiving recipes. Which trade-off fits depends on the recipe, so treat it as a judgment call rather than a rule.

    Small amounts also get harder to measure accurately as they shrink: half of ¾ teaspoon is not a measurement most spoon sets offer. Rounding gently and tasting as you cook covers most of these cases.

    Ingredients That May Not Scale Perfectly

    Multiplying quantities is arithmetic; flavor and texture are not always arithmetic. A few ingredient groups deserve a cautious hand when a recipe is scaled, in either direction:

    • Salt: perceived saltiness does not always track quantity linearly, so scale it, then season to taste
    • Spices and strong aromatics: doubled cumin or garlic can dominate a dish that the original balanced
    • Chili and heat: heat accumulates aggressively, so scale up in stages and taste
    • Leavening agents (baking powder, baking soda, yeast): amounts interact with flour, liquid and pan depth, so large scale-ups may not need a fully linear increase
    • Thickeners (flour, cornstarch): thickening depends on surface area and evaporation as well as quantity
    • Extracts and flavorings: vanilla or almond extract scale better in smaller steps than in one big jump

    The math is a starting point

    For these ingredients, use the scaled quantity as your first estimate, then adjust by taste and texture. There is no universal rule that fits every recipe, which is exactly why the judgment stays with the cook.

    Cooking Time Does Not Always Scale with Servings

    Doubling the ingredients does not mean doubling the cooking time. Time in the oven or on the stove depends on how heat travels through the food, and that is shaped by more than quantity:

    • Depth of food in the pan: a deeper layer cooks more slowly than a wider, shallower one
    • Vessel size and material: a bigger pot of soup takes longer to come to a simmer
    • Oven load: two trays cook differently from one, and may need rotating
    • Thickness of individual pieces: six chicken thighs of the same size need roughly the same time as four
    • Cooking method: a simmered stew forgives scaling more gracefully than a delicate bake

    Pan Size Matters

    The quiet failure mode of scaling up is keeping the original pan. Doubled cake batter in the same tin becomes a much deeper layer, which changes how the center cooks relative to the edges. The result can be underbaked in the middle, overdone at the rim, or simply a different texture from the recipe you liked.

    The practical habit: when a recipe scales up meaningfully, either move to a larger vessel or split the batch across two of the original. Rather than relying on a rigid conversion chart, compare the depth of the food to what the original recipe would have produced and aim for something similar.

    Scaling Baking Recipes vs. Everyday Cooking

    Everyday cooking, like soups, stews, salads and most stovetop dishes, tends to forgive scaling. Quantities can flex, seasoning is adjusted at the end, and an extra carrot rarely ruins anything.

    Baking generally leans harder on ratios and chemistry: flour to liquid, fat to sugar, leavening to everything else. The scaling formula still applies, but the margins are tighter, and pan geometry and baking time matter more. When scaling a bake for an occasion that matters, scaling in smaller steps, or baking the original recipe twice, is often the safer route.

    This is a general pattern rather than a law: plenty of bakes scale beautifully and some savory dishes are surprisingly picky. The pattern just tells you where to pay closer attention.
